This Winter season, find fresh and tasty eats at Appalachia Kitchen, located at the Corduroy Inn Property at Snowshoe Mountain Resort. Just a 5-minute walk (or hop on the free shuttle) north of the main village, The Corduroy Inn has three restaurants onsite which are Tuque’s Bar and Grill (casual American fare), The Pizza Slice (wood fired artisan pizza and gelato), and Appalachia Kitchen. Appalachian Kitchen is a newly remodeled restaurant that is unique to the mountain as it offers an upscale casual dining experience and provides patrons with farm-to-table modern American cuisine with local flare. Their meats are sourced regionally from Appalachian farms, and when the season permits, all their produce is sourced from regional farms. Snowshoe has over 20 eating and drinking establishments which include cozy coffee shops, casual fare, upscale fine dining, and several bars.

Behind the scenes is Chef Ed Shuttleworth. He is the former Head Chef of Alpine Ristorante and has answered locals’ prayers for fresh innovative American food with an Appalachia flare. The restaurant is owned and operated by Kristin and David Billings, a husband/wife team who have recently given the building a much-needed renovation. The space is best formerly known as the Red Fox restaurant run by Margaret Ann and Brian Ball between 1982-2006. The Billings family believes that the facelift of the property combined with the culinary talents of Chef Ed will provide a new concept not found elsewhere on the mountain.

On Thursday, November 28th, they will offer a Thanksgiving Day Buffet from 12-6p. There will be a variety of carved items such as sage butter roasted turkey and a maple glazed Virginia ham. These will be accompanied by sautéed rainbow trout, char-grilled pork loin, and all your favorite Thanksgiving sides.

This Winter Season’s Menu is filled with a variety of starters such as baked brie encroute, prosciutto wrapped in fresh mozzarella with tomatoes and a balsamic reduction, hickory smoked trout and crab cakes, and the list goes on. The entrees are plentiful as well which include rainbow trout with a hazelnut brown butter, venison meatloaf with a red wine demi-glace, char grilled filet mignon with a bordelaise sauce, gorgonzola encrusted strip steaks accompanied by mushroom demi, a pan-seared Atlantic swordfish, and so much more. Don’t forget to bring the kids as they have their own menu which includes house made chicken tenders with panko breading, the ever-popular macaroni and cheese, and other favorites.
