Gustard’s Bistro Chef Stephen Gustard has opened a new bistro in White Sulphur Springs bringing wares from local farmers and culinary creativity to the table. He moved to White Sulphur Springs from Virginia Beach to attend the Greenbrier Apprenticeship Program where he trained under Chef Peter Timmins, CMC and other talented chefs, graduating in 2004. Stephen went on to gain experience, rise through the ranks, and distinguish himself at the Boca Bay Pass Club, the Greenbrier Sporting Club, the French Goat, and Tamarack. He returned to White Sulphur Springs to open Gustard’s Bistro at 759 E Main Street. This location was formerly 50 East and was an instrumental part of the flood recovery in 2016. He and Delphine Houssin, whom he met at the French Goat, purchased 50 East in April. Delphine is from Belgium and brings with her a vast amount of knowledge about French cuisine and pastries which is reflected on the menu.
The menu is well-designed and diverse, yet not overwhelmingly large. It includes Tidewater Crab and Spinach Dip, a nod to Gustard’s roots in Virginia Beach. Also included are Chef’s Daily Soup, Hummus Wrap, Grilled Coulotte Steak, Fish and Chips, Clean Acres Lamb Gyro, and more. The dessert menu features Chef’s Crème Brulé and Delphines Chocolate Cake. You can view the entire menu at gustardsbistro.com. The Bistro’s layout is open, inviting, and comfortable. It incorporates both indoor and outdoor seating as well as tables and booths. Beneath three informative and attractive posters depicting cuts of meat, patrons can enjoy the sensory delights of an open kitchen. The U-shaped bar contributes to the open atmosphere and facilitates interaction and camaraderie.
Also featured is Gustard’s Tasting Room. It is a quiet place to enjoy great food and delicious cocktails. It is quaint and comfortable and is the perfect spot if you are looking for a more romantic place downtown. “Our restaurant is evolving into what I am happy to be, a culinary destination” Stephen says. “Farmers are starting to produce crops and the creativity will be endless with fresh local products.” Gustard’s Bistro is indeed a destination you do not want to miss out on.
Check out Gustard’s Bistro Wednesday through Monday from 11 a.m. to 9 p.m., and Gustard’s Tasting Room is open Thursday through Saturday from 5 to 9 p.m.
