The “Farm-to/Table” movement is thriving in Greenbrier Valley. This region is blessed with a plethora of farmers, orchards, organic growers, kindly raised poultry, rabbit, beef, lamb and so much more. Adding to the local Table we have local wineries, distilleries and breweries right here in Southern West Virginia.

“There’s no cut and dry definition of farm-to-table (sometimes called “farm to fork”). It broadly refers to food made from locally-sourced ingredients, often natural or organic. Restaurants that subscribe to this practice are available almost everywhere, from small midwestern locales to urban centers.” This is a quote extracted from a larger article which goes on to celebrate the movement’s boon to local economies and the deep appreciation of the consumers who enjoy it.

Sparrow Huffman is a pioneer of this trend on Washington Street in downtown Lewisburg. She currently owns and operates two eateries downtown. After managing The Stardust Cafe for many years she now owns the restaurant as well as the historic, iconic General Lewis Inn. She is a chef, gardener, and is familiar with all aspects of hospitality and tourism in the Greenbrier Valley. Sparrow tells us, “I believe that my generation and the millennials love authenticity. Food trends began changing, people wanted to see and know about their food, they wanted to feel like they were a part of it. This built on the amazing work done by Alice Waters in the 70’s and the Slow Food Movement began in Italy in the 80’s. That desire exploded into a full-blown food culture shift! I’m honored to be a part of the work to do that shift.”
